Status The construction work started in April 2014. The refurbishment was finished by the end of May 2014 and the bakery opened in June 2014.

Brief To design the first bakery for an online bespoke bakery business, La Dolce Beita. The online business was started four years ago and has grown quickly. The company’s success means that it can now no longer operate as a “home made” bakery and has had to look for a commercial location.
Program The proprieter and head baker, Beatriz Díez, wanted the shop to be versatile, combining different functions associated to different areas of the shop. The objective was to create commercial space that sold personalized and prêt à manger baked goods as well kitchen equipment and that housed the bakery as well as a workshop for baking classes.

Background The site is located on the ground floor of a residential building in the north of Madrid. The shop had previously been a copy shop/internet café and was in no way prepared for a food based business.
Personal Intention The reduced surface area, the limited goemetry and installations of the existing locale were factors that conditioned the design of the shop. To make the most of the existing situation, I designed a commercial space with a clear, open layout that combines different usages with a flowing transition. The shop is designed to be open and welcoming, with a transparent façade, clean colours and warm lighting. The interior design and decoration is all based on the idea of creative and personalization, the idea that every creation of the bakery is a unique product of the imagination.
